Each bottle of cava, created from different varieties of grape or monovarietals, is obtained only from an exclusive group of nine types of vine authorised by the Cava Regulatory Council, which ensures the quality of the products, made according to traditional and ecological methods.
A select group of grapes that define four DO Cava zones
Quality sparkling wines -produced under DO Cava in Spain- come from four very specific areas: Viñedos de Almendralejo, Levante Zone, Ebro Valley and Comtats de Barcelona. This last area stands out for being the wine-growing area in which cava originates.

At the top of the white grape are the three most characteristic varieties: Macabeo (with a moderate point of sugar and acidity), Xarel·lo (unique and full-bodied flavour) and Parellada (adds finesse and freshness). This magic triangle is accompanied by the varieties Chardonnay (endowed with great aromatic power) and Subirat Parent (variety most used in the production of sweet or semi-sweet sparkling wines).

These four red grape varieties, Monastrell (generates an intense colour during its production process and has, thanks to the tannins, a high aging potential), Red Garnacha (offers soft wines with very fruity aromas), Trepat (the final result is red fruit aromas with spicy touches, offering subtle flavours) and Pinot Noir (produces wines with a low level of tannins, fruity and aromatic) will delight lovers of rosé cavas.

Pinot Noir is, despite its international fame, the youngest of the nine grape varieties authorised by DO Cava and can also be used for the production of “Blanc de Noir” whites, as the case with Cava Reserva Brut Blanc de Noirs by Juvé & Camps, with a golden colour with light reddish hues.
