Open a bottle of cava, pour it into the glass, and prepare to experience a full sensory journey. Behind every glass of cava, there is a technique that allows you to discover nuances, aromas, and sensations that reveal themselves when you give it your full attention. If you want to appreciate cava as a sommelier would, follow these steps.

Appearance

The ritual begins with your eyes. Pour the cava into a flute or tulip glass —ideal for preserving aroma and effervescence— and observe it against the light. A sommelier values clarity and color: pale, golden, or greenish tones indicate youth; deep golden tones, longer aging. Also pay attention to the bubble stream: the finer and more persistent the bubbles, the higher the quality.

Nose

The next step is to bring the glass close to your nose without swirling it too much. Young cavas display fresh aromas —green apple, pear, white flowers—; in long-aged cavas, notes of toasted bread, nuts, and brioche appear. A sommelier distinguishes between the first nose (initial aromas) and the second nose (those that emerge after gently moving the glass).

Palate

Take a small first sip, just to prepare the palate. On the second sip, let the cava flow across your entire mouth. Analyze the acidity, body, and texture of the bubbles. A well-balanced cava will be fresh, vibrant, and creamy. Also evaluate the finish: great cavas leave a long and elegant sensation, with echoes of fruit or bakery notes.
