Iberian Secret Rice with Cuttlefish and Mushrooms & Cava Milesimé

This Iberian Secret rice by itself is already good, but if you add cuttlefish and mushrooms (you can put the type that you want) it will give it a powerful and very tasty touch.

Ingredients
  • 90 grams per person of rice
  • Iberic secret
  • Cuttlefish with its spleen
  • Mushrooms (to taste)
  • Sofrito: Garlic, red and green pepper, leek, 1 tablespoon per person of caramelized onion and tomato sauce, natural tomato, teaspoon of Señora meat, teaspoon of sweet paprika, splash of stale wine.
  • Saffron infusioanato
  • Salt
  • Pepper
  • OOVE
  • Rosemary
  • Chicken broth (2 and a half parts for 1 rice)
Instructions
  1. To begin, we will cook the Iberian secret with a little oil and reserve it separately.
  2. At the same time, we will heat the chicken broth in a pot and reserve it to add it when we have the sauce done.
  3. We will begin to make the sauce, we will add to the pan: the whole garlic, red pepper, green pepper, the leek and stir.
  4. Next, we will add the cuttlefish with the sauce except the spleen of the cuttlefish that we will add later.
  5. To finish the sauce: add the natural tomato and the caramelised onion and tomato sauce, a tablespoon of Señora meat, a splash of stale wine and a little paprika. We will stir over medium heat for 5 minutes.
  6. Add the mushrooms and stir over low heat for 7 minutes. It is very important that all the liquid has evaporated.
  7. Add the rice (90 grams per person) and stir to integrate it into the sauce.
  8. We will add the chicken broth to the pan, which we have previously heated in a separate pot. We will add the infused saffron, salt and pepper.
  9. While we will leave the pan over high heat for 5 minutes, the broth will evaporate and then we will leave it for 12 more minutes over low heat.
  10. To finish, we will let it rest for 3 minutes while in a separate frying pan we will sauté the Pádron peppers.
  11. Once the rice is replaced, we will add the Iberian secret that we have reserved previously, the sautéed Padrón peppers and a little rosemary that we will smoke on top.
