Cava Gran Juvé & Camps

Typical Empordà rice in which the black color basically gives the onion well caramelized.

Ingredients
  • 90 grams per person of rice
  • 4 scampi
  • 8 shrimp
  • 150g. mussels
  • 150g clams
  • 150g crab
  • 4 sausages
  • 250g pork chop
  • One large cuttlefish (1kg)
  • Pop
  • Sofrito: Garlic, parsley, natural tomato, meat, sweet paprika, 1 tablespoon per person of onion sauce, a splash of white wine.
  • Minced: garlic and parsley
  • Salt
  • Pepper
  • Parsley
  • Infused saffron
  • OOVE
  • Fish and seafood broth for black rice (2 and a half parts for 1 rice)
Instructions
  1. Previously, we heated the broth in a separate pot to add it later.
  2. Also, we will confit the cuttlefish and reserve it to add it in the sauce.
  3. We start turning the crayfish and shrimp in the paella with a little oil, so that they leave a bit of flavor, and we will reserve them in a separate dish for later.
  4. We will do the same, with the mussels, clams and crab.
  5. Next, with a little more oil we will add the sausages, the pork chop and we will begin to make the sauce.
  6. Add to the paella: garlic, parsley, natural tomato, red pepper meat and sweet paprika.
  7. Next, add the cuttlefish that we have previously candied, the octopus, a splash of white wine and the caramelized onion and stir over medium heat for 5 minutes until it is reduced.
  8. Next, add the rice (90 grams per person) and stir to integrate it into the sauce for 3 minutes.
  9. Add to the paella the fish and seafood broth, which we have previously heated in a separate pot, the infused saffron, salt and pepper and the minced garlic and parsley.
  10. We leave the paella over a high heat for 7 minutes for the broth to evaporate and stir continuously.
  11. Next, we will add the material that we had previously reserved: the crayfish, the shrimp, the mussels, the clams and the crab and we will leave it for 5 more minutes over low heat.
